1. 15-Minute Vegan Chili

Ingredients:

  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder

Instructions:

  1. In a pot, heat all ingredients over medium heat.
  2. Simmer for 10 minutes, stirring occasionally.
  3. Serve with avocado & tortilla chips.

2. 20-Minute Tofu Stir-Fry

Ingredients:

  • 1 block firm tofu, cubed
  • 1 tbsp soy sauce
  • 1 tsp garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 tbsp sesame oil

Instructions:

  1. Heat sesame oil in a pan & cook tofu until golden.
  2. Add veggies & stir-fry for 5 minutes.
  3. Stir in soy sauce & garlic, cook for another 2 minutes.

Chickpea & Avocado Sandwich

Ingredients:

  • 1 can chickpeas, mashed
  • 1 avocado
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • 2 slices whole-grain bread

Instructions:

  1. Mash chickpeas & avocado together.
  2. Stir in lemon juice & garlic powder.
  3. Spread on bread & enjoy!

4. Easy Vegan Curry (20 min)

Ingredients:

  • 1 can coconut milk
  • 1 cup chickpeas
  • 1 cup cauliflower florets
  • 1 tbsp curry powder
  • 1 tsp garlic, minced

Instructions:

  1. In a pot, heat all ingredients over medium heat.
  2. Simmer for 15 minutes until veggies are tender.
  3. Serve with rice.

Zucchini Noodles with Pesto


5. Zucchini Noodles with Pesto (10 min, no cooking required!)

Ingredients:

  • 2 zucchinis, spiralized
  • ¼ cup basil pesto (vegan)
  • ½ cup cherry tomatoes, halved
  • 2 tbsp pine nuts

Instructions:

  1. Toss zucchini noodles with pesto.
  2. Add cherry tomatoes & pine nuts.
